Flavourful Dried Porcini Broth


6 grams BeoHarvest Dried Porcini Mushrooms

175 grams Portobello Mushrooms, coarsly chopped

1 onion

2 carrots, coarsly chopped

2 celery stalks, coarsly chopped

1 clove of garlic

2 tablespoons oil

2 tablespoons butter 

5 cups water

BeoHarvest Black Garlic Porcini Salt to taste


Step I   Over medium heat cook butter and oil.  Add onions, and stir occasionally until soft.  Add coarsely chopped portobello mushrooms, along with carrots, celery, clove of garlic and BeoHarvest black garlic porcini salt to taste. The vegetables and mushrooms will be cooked in about 15 minutes (keep in medium heat).

Step II   After 15 minutes, the vegetables will be soft and you will smell the fragrance of the Portobello mushrooms.  Add 5 cups of water, cover the pot and bring to boil.

Step III  Once it boils, reduce the heat and add BeoHarvest dried porcini mushrooms.  For the best results and to get most of the flavour, let the broth simmer for 40 minutes.

Step IV   Remove the pot from heat.  Strain the broth through a fine sieve into a large heatproof bowl.  It is very important to extract as much precious liquid as possible by pressing down on the vegetables with a wooden spoon.  This porcini broth has a rich mushroomy base that can be added to ravioli, risotto, stew or soup.  You can also prepare the broth ahead of time and store it in the refrigerator up to three days or up to six months in the freezer.
